Discovering the edible algae

Algae are marine or freshwater plants that exist far more than terrestrial plants and are used as dietary supplements, medicines, cosmetics or fertilizers, in some cases starting in 3000 BC.

Algae rich in potassium, nitrogen, phosphorus and many vitamins and proteins can be divided into three categories:

Red algae rich in pigments can absorb deep light

Brown algae are rich in fucoxanthin, an iodine-rich pigment, which gives them a yellowish-brown color.

Green algae, mostly unicellular or colonially bound, include the very common Mediterranean lettuce.

Fucus vesiculosus: Brown algae, also known as kelp algae, live in medium or extremely cold regions. Greeks already know how to treat snake bites and thyroid diseases. Today, because it stimulates the thyroid gland, which regulates basic metabolism, it is mainly used as a supplement for weight control. Rich in vitamin A, B1, B2, C, D, E, protein and carotenoids.

Klamathian algae: Algae collected mainly from Lake Klamath, Oregon. It is one of the most nutritious algae. It is rich in vitamins, proteins, mineral salts, carbohydrates, lipids and enzymes. For this reason, it is used as an anti-fatigue and anti-aging supplement (due to the presence of antioxidants).

Kombu alga: It's brown algae from Japan. Like all brown algae, it stimulates metabolism. However, the presence of excreted and purified substances makes them components of agents that stimulate the immune system, as well as components used for pressure control and fluid discharge.

Porphyra algae: Japanese red algae used for sushi preparation. Rich in vitamins A, C and D, mineral salts and omega 3. It can also be used in cosmetics to treat eczema.

Undaria algae: brown algae, representing the main sources of nutrition in Japan and Southeast Asia. It is rich in vitamins and essential amino acids, such as tryptophan, and is therefore sold as a dietary supplement in the West.

Spirulina algae (Spirulina algae): Freshwater algae of subtropical regions, having a typical spiral shape, hence its name. Locals use it to make bread and other preparations. It is rich in plant and mineral proteins and can be used as a supplement to the immune system and osteoporosis.
